Zucchini Loaf Cake

This delicious zucchini loaf is moist and tasty. 

Cinnamon and vanilla give it a sweet flavor. 

This zucchini loaf is perfect with your morning coffee. 

This cake also makes a tasty dessert by topping it off with cream cheese frosting.

The zucchini in this loaf adds some extra vitamins to this yummy treat.  Zucchini adds extra vitamin C, B-6 and potassium to your diet. 

This green vegetable is also known for its anti inflammatory benefits.   A sweet treat with added vitamins is a win-win!

The mild flavor of the green squash does not overpower the cake at all.  In fact, many people don’t know this bread has zucchini in it until I tell them.  

Zucchini Cake

One large zucchini grated will yield approximately two cups for this recipe.  More zucchini can be added as desired. 

A hand grater works well since the zucchini is soft and is quickly grated.

Zucchini Loaf

The nuts are optional for these baked loaves.  If you like to add some nutty flavor to your bread, finely chopped walnuts, almonds or pecans are all great options.

Rather than deter my kids from trying this delicious loaf, I call it cinnamon nut loaf.  This way they don’t necessarily know it is filled with a healthy green vegetable. 

This trick has worked a few times, they don’t need to know there is green squash baked in! 

Delicious Zucchinin Bread

This recipe will make three small loves or two large ones.  You can also bake this bread in an 11”x 9” cake pan if desired. 

This makes a nice cake for cutting into smaller pieces when feeding a crowd.  Sweet and tasty cream cheese frosting can be added to make this a healthier cake choice!

Instructions
  1. Preheat oven to 350 Grease & flour loaf pans. Combine dry ingredients in a small bowl and mix well with whisk.
  2. In a larger bowl, beat eggs, add sugar and oil using an electric mixer. Grate zucchini and add to mixture. Add vanilla and water and mix.
  3. Slowly add in dry ingredients and beat until smooth. Add in finely ground nuts (if desired), beat until combined. Pour batter into 2 larger or 3 smaller loaf pans.
  4. Bake at 350 for 50-60 minutes. Test with a knife to be sure the center is cooked.
  5. Makes 2 large or 3 small loaves. You can also make a cake shape by using a 9 x 12 pan.
