This is a light, crunchy and refreshing salad that takes just minutes to concoct.
This salad is one of my easiest “throw together” salads, using just four ingredients plus dressing.
We enjoy some salad the day we make it and always make plenty of extra. This is a perfect salad to bring for lunch since the dressing is mixed in.
The day I make it, I automatically make a few lunch or snack sized portions in containers. This saves me time in the morning when trying to get six people out of the house on time.
Another way to save myself time, is I chop a whole onion or sometimes two. I keep the extra to use in sauce or other recipes over the next few days.

This salad barely has a recipe because of the short list of ingredients. That is what makes this a favorite to chop and put together quickly.
For the dressing, I generally mix a simple balsamic vinaigrette and season with salt and lots of fresh pepper. If I am in a rush I will use a bottled vinaigrette dressing which is fine to save time.
The mini cucumbers look and taste great in this salad. They can be sliced in halves or quarters depending on how chopped you prefer your salad. The same is true for the tomatoes. I buy grape or cherry tomatoes and usually quarter them. I prefer my onion very finely chopped so it mixes throughout the salad.
If you are in a fancy mood, the cucumbers can be scored on the edges.
