This is a light and fruity spinach salad with delicious poppy seed dressing!
This poppy seed dressing is easily made ahead of time and kept in the refrigerator for repeated use.
The salad itself takes just minutes to assemble.
When I make the dressing ahead of time, this is a nice quick salad to get on the table for my hungry family.
Spinach, almonds and berries are all on many of the Powerfoods Lists, so this salad is a particular favorite of mine.
Although the recipe calls for toasting the almonds, I have tried both. Toasting the almonds in the oven briefly, gives the added crisp and toasty flavor. If you are pressed for time, or simply forget as I have done, the salad is just as delicious with plain almonds.
The Poppyseed dressing will last us for several meals. Recommendations say this homemade dressing can last for weeks or even months in the refrigerator. Our Poppyseed dressing is always long gone after a few weeks.
For additional color and fruity flavor, Mandarin oranges can be used with the strawberries. I often like to add sunflower seeds on top for more nutty flavor.

As far as blenders go, a few months ago we upgraded to a new machine. We decided it was time for a real upgrade, perhaps a commercial model.
